So today, I’m giving you my
top-secret lean texas chili recipe.
I CALL IT:
OUTLAW CHILI

I invented this recipe with hail-mary hopes
of designing a chili that was essentially carbless,
low in calories, and yet very high in protein,
without compromising flavor.
I think I succeeded, if I do say so myself.
My wife, who was initially uninterested in the dish,
has since converted, and we can generally be found most nights,
sitting in our Calvins on the sofa,
watching The Mentalist the third time through,
under warm accent lighting,
enjoying our thousandth,
piping hot bowl
of this chili.
…prior to an ice-cream nightcap.
Yes, even in summer. We’re weird.
A great on-repeat is what it is, y’know?
I like chili of all kinds,
but legumes cause the calories
to skyrocket quickly, especially when adding toppings-
And I just like this style better.
Its base makes quality toppings shine, too.

goes a loooong way
in keeping happy clients.
And this one has it all.
Significant protein content.
Limited calories and carbohydrate.
Rich, indulgent flavor.
A combo I’m always interested in.
THE IMPORTANCE OF GOOD STOCK
This recipe works best with
homemade chicken stock.
The stock provides thickness and
body, as well as precious minerals
and flavor.
Stock is made by boiling the
carcass of a whole broiler chicken.
You pull the meat from the cooked
bird for other recipes,
then transfer the carcass and its
drippings to a stock pot.
Boil the bones on high,
covered and vented,
for 6-8 hours in purified water,
adding more when it boils off.
Stock is the secret ingredient that
adds rare L-Glycine,
an amino acid which takes age off
your joints, skin, tendons, and guts.
Most people don’t get much
due to the modern consumption of
deboned meats.
LETS JUMP IN
you’re going to need a HUGE pot. aimed at meal prep, this makes a weeks worth to feed two adults.
Ingredients List:
350g sweet onion
100g red bell pepper
2 cloves elephant garlic
or 6-8 regular garlic
4lbs 85/15 organic ground beef
2 tbsp olive oil
6 cups homemade chicken stock
4 tbsp rendered beef fat
2 x 28 oz cans peeled crushed tomatoes
6oz can tomato paste
1/2 tsp molasses
1/4 tsp cinnamon
1/4 tsp coriander
4tbsp mixed chili powder
1 Tsp cocoa
2 squirts Valentina
1 squirt Tapatio
dash cayenne
2tbsp cumin
2tsp oregano
2tsp smoked paprika
1/3 tsp pepper
1 ½ tsbp salt
5 cups water
3 tbsp cornmeal
juice of one lime
Instructions:
sear / crush beef.
remove beef from heat slightly undercooked and drain / catch drippings.
sear minced veggies in oil.
add 2 tbsp beef fat back to veggie mixture.
add a splash of stock.
continuing cooking a few minutes.
add beef back.
add some stock and last 2tbsp beef fat back.
add tomatoes and tomato paste.
add remaining stock.
mix.
add spices, mix.
add water.
add cornmeal SLOWLY, stirring or it clumps.
simmer / reduce for 20m
add juice of 1-2 fresh limes
stir and turn off heat.
serve with tortilla chips on top.
other toppings options:
shredded hard parm, cheddar, monterey jack, pepper jack.
jalapenos
greek yogurt / sour cream
hot sauce
fresh veggies; green bell, mushroom, cilantro, corn
OUTRO
this chili tastes even better
after about three days in the fridge.
we just leave it in the pot,
with the lid on.

and in grams:

13 carbohydrates

with tons of flavor.
if you add:
20g of tortilla chips
12g of shredded cheddar,
